Owned by Louis Fabre, this excellent estate near Beziers, in the southern Languedoc, benefits from the Mediterranean climate. Recent investment, cold fermentation and good vinification produce aromatic and spicy wines with remarkable finesse. Produced from organic fruit grown at the small estate, Grande Courtade (meaning `large sunny courtyard`), this is a delicate salmon pink rosé made by the `saignée` method of bleeding the fermenting juice from the skins, to preserve the fruit flavours and aromas. It is dry with a perfumed bouquet of vibrant summer fruits on the palate and a refreshing and crisp acidity. Enjoyed as an aperitif or with salads, cold meats and chicken dishes. 12.5% and Organic, Vegan.

Domaine Terrebrune was created by trained sommelier Georges Delille, who purchased the land in 1963 and has since grown the name to what it is today. Pale salmon in colour, the nose displays aromas of wild strawberry and pink grapefruit with a subtle hint of fennel. This is a textural, savoury and structured rosé; on the palate it shows grapefruit pith and kumquat on entry and then creamy rhubarb pie notes on mid-palate. The finish is refreshing, long and precise. Perfect for drinking now (and especially with a meal) but there is plenty of depth and focus here to allow for ageing.
